Rice Soaking
Seasonal glutinous rice is soaked in pure, soft water until each grain is supple and ready—setting the foundation for a clean, elegant brew.
Steaming & Cooling
The rice is steamed evenly to preserve translucence and aroma, then cooled naturally to an inoculation-ready temperature in a clean environment, ensuring precision and consistency.
Layered Infusion
Artisanal koji is folded into the rice, followed by jasmine blossoms and green tea—creating a depth of flavour and complex aroma.
Slow Fermentation
Fermented slowly at cool temperatures to develop complexity without harshness—resulting in a layered, harmonious profile.
Micro-filtration & Aging
Post-fermentation, the brew is micro-filtered and briefly aged to refine aroma, texture, and mouthfeel—resulting in a clean, crisp finish.
